Shan Tounsi is less a recipe and more a way of eating. Found on breakfast tables across Tunisia, it brings together ripe tomatoes, eggs, olive oil and bread in a dish that is nourishing, comforting and deeply rooted in everyday life. Like many great Mediterranean meals, its success depends on the quality of its ingredients.

Ingredients
- 4 ripe tomatoes, grated
- 2 eggs
- 1 tbsp harissa (optional)
- 2 tbsp Uzalis Extra Virgin Olive Oil
- Sea salt
- Black pepper
- Fresh crusty bread
Method
- Heat one tablespoon of olive oil in a shallow pan.
- Add the grated tomatoes and cook until reduced and thickened.
- Stir in harissa if using.
- Season with salt and pepper.
- Crack the eggs directly into the sauce and cook until the whites are set and the yolks remain soft.
- Finish with a generous drizzle of Uzalis.
- Serve immediately with fresh bread for dipping.
