Shan Tounsi is less a recipe and more a way of eating. Found on breakfast tables across Tunisia, it brings together ripe tomatoes, eggs, olive oil and bread in a dish that is nourishing, comforting and deeply rooted in everyday life. Like many great Mediterranean meals, its success depends on the quality of its ingredients.

Ingredients

  • 4 ripe tomatoes, grated
  • 2 eggs
  • 1 tbsp harissa (optional)
  • 2 tbsp Uzalis Extra Virgin Olive Oil
  • Sea salt
  • Black pepper
  • Fresh crusty bread

Method

  1. Heat one tablespoon of olive oil in a shallow pan.
  2. Add the grated tomatoes and cook until reduced and thickened.
  3. Stir in harissa if using.
  4. Season with salt and pepper.
  5. Crack the eggs directly into the sauce and cook until the whites are set and the yolks remain soft.
  6. Finish with a generous drizzle of Uzalis.
  7. Serve immediately with fresh bread for dipping.
