A Celebration of Simplicity
Shan Tounsi is a traditional Tunisian family dish that combines Um Meleh — a colourful assortment of homemade pickled vegetables — with tuna, olives and eggs, generously dressed with extra virgin olive oil. Found on family tables throughout Tunisia, it is enjoyed as a light meal, starter or part of a larger mezze spread.
Its beauty lies in the balance between the tangy crunch of the Om Mekhlel and the richness of the olive oil. A generous drizzle of high-quality extra virgin olive oil softens the acidity, enhances the flavours and brings the entire dish together.

Preparation: 15 mins (using prepared pickled vegetables)
Ingredients
* 200g Tunisian-style pickled vegetables (carrots, turnips, cauliflower and bell peppers)
* 200g tuna, drained
* 2 eggs
* 100g green olives
* Sea salt, to taste
* Freshly ground black pepper, to taste
* 1 tablespoon of harissa
* 4 tbsp Uzalis Extra Virgin Olive Oil
Method
1. Boil the eggs for 5 minutes. Cool under cold water, peel and cut in half.
2. Arrange the pickled vegetables on a serving platter.
3. Add the tuna and olives.
4. Place the eggs on top.
5. Season lightly with black pepper and a pinch of salt if needed.
6. Generously drizzle with Uzalis Extra Virgin Olive Oil just before serving.
